2013 Vin Gris of Pinot Noir

Vin Gris is a white wine made from red grapes. At Cuvaison, we think of this as a “win-win.” Allow me to explain. Pinot Noir is a black grape, but with relatively thin skin. Since the color in red wine comes from the skins, the ratio of skins to juice has a strong impact on the color of the wine. To improve the density and richness of our Pinot Noir wine, on the day of crush we bleed-off (a process called saignée) a small percentage of the freshly crushed juice. This accomplishes two things; it darkens and concentrates our Pinot Noir wine, and creates the fresh juice we use to make our Vin Gris. This lightly colored juice is collected into a stainless steel tank and fermented like a white wine. Our 2013 Vin Gris of Pinot Noir displays strawberry and melon nestled in a bed of violets and rose petals. This rosé is quite bright on the tongue with notes of raspberry, cherry and a lush but long finish and cleansing palate.
